Vegan British Stew with Dumplings Recipe

Are you looking for a hearty winter stew? This is my take on a classic British “chicken” stew with dumplings. Before abandoning meat, I used to love a stew in the cooler months, my British mother would often make it with beef or chicken and include a variety of root vegetables, needless to say it was delicious. Today, I have created a basic plant-based version of one of my favourite childhood meals. I chose to use oyster mushrooms as a source of protein as it has a very meaty texture and can take on a variety of flavours to mimic chicken or pork. I dedicate this meal to my brother and sister-in-law, who enjoyed this dish so much and suggested I share it on my blog. I hope you enjoy this simple belly hugging meal!
